Can’t Beat a Beet

If your childhood was anything like mine, a beetroot never really made an appearance on the dinner plate. I think I saw it once or twice on a “fancy” buffet like Shoney’s ;). But I’m here today to give this little plant the kudos it deserves.

This colorful root is packed full of nutrient-dense calories (these are the kind of calories you want!). These calories consist of fiber, iron, potassium, folate, and vitamin C and just to name a few.

Having all these nutrients provide many health benefits. The fiber helps with stabilizing blood sugar, assists with weight loss, and promotes a healthy gut. 

Folate, potassium, and betanin (which gives the beet its color) help with cell function and inflammation.

Beets also help keep cholesterol and cancer at bay.

There are enough studies out there to make a case for giving the beet a chance. 

Try them roasted, pickled, or grilled. 

Make a salad with the beets. Make a beet smoothie. Make some hummus with a beet.

Any way you approach it, you can’t beat a beet.
