Many times we stockpile food thinking we are going to use it in the near future but it ends up sitting in the pantry for a year. I have been trying to clean out my pantry before I bring new groceries into the house for the holidays.
This has become a platform for creativity. I have had to incorporate various ingredients in order to consume my current groceries before I purchase more.
This has resulted in unique, fun, and most times, delicious meals.
That is why I want to extend the invitation to what I’m calling the Gratitude Pantry.
This month, challenge yourself to use any of those items that have been sitting in the pantry for way too long.
In my pantry, I had half a bag of northern white beans and some leftover bulgar I had used for camping at the beginning of summer. Through experimentation, and gratitude for having ingredients to make a meal, I whipped up a citrus bean salad which could best be compared to Tabbouleh.
It was different. It was nutritious. It wasn’t half bad!
